Carrot Cake recipe

Ingredients (18 slices)

400 g carrots, 1 organic orange, 1 organic lemon, 100 g hazelnut kernels, 3 eggs, 1 pinch salt, 150 g brown sugar, 100 ml oil, 200 g flour, 100 g ground almonds, 3 teaspoons baking powder, 1/4 Tsp grated nutmeg, 1/4 tsp ginger powder, 1/2 tsp cinnamon, 300 g double cream cheese, 125 g powdered sugar, grease and flour for the mold

preparation

1. Peel and grate carrots. Wash orange and lemon and rub off half of the peel. Halve citrus fruits and squeeze out half each.

2. Chop nuts. 1 tablespoon of nuts and 2 tablespoons of carrot to decorate. Beat eggs, salt and sugar 2-3 minutes. Stir in oil, citrus juice and peel. Mix flour, almonds, remaining chopped nuts, baking powder, nutmeg, ginger and cinnamon and stir. Fold in carrots.

3. Grease the box shape (about 11 x 30 cm) and dust with flour. Add the dough and bake in the preheated oven (electric cooker: 175 ° C / circulating air: 150 ° C / gas: see manufacturer) for about 1 hour (make a stick test!). Let the cake rest for about 10 minutes, then place on a wire rack and allow to cool.

4. Squeeze out the remaining 1/2 lemon. Stir cream cheese, lemon juice and powdered sugar. If necessary, straighten cold cake and cut horizontally. Brush lower half with cream cheese, topping on top half. Cover with fresh cream cheese, decorate with carrots and nuts.
