Red lentil salad with sheep's cheese

  • 250 g red lentils
  • salt
  • pepper
  • 1 stick of leek
  • 75 g bacon (bacon)
  • 1 tbsp oil
  • 2-3 tablespoons white wine vinegar
  • 1/2 teaspoon vegetable broth (instant)
  • 1 teaspoon dried thyme
  • 100 g sheep's cheese
  • possibly thyme for garnish

Preparation, about 30 minutes

1. Cover the lentils in 1/2 l salted water and simmer for 8-10 minutes.

2. Clean the leeks, wash them, halve them lengthways and cut into thin strips. Cut the bacon into pieces. Heat oil in a pan. Fry bacon crispy in it. Remove, drain on kitchen paper.

3. Fry leek in frying fat for about 5 minutes. Add 1/8 l of water, vinegar, broth and thyme, bring to a boil and simmer for 2-3 minutes. Season with pepper and salt if necessary.

4. Drain the lenses. Add the bacon to the leek and mix well. Season again with salt and pepper. In feta cheese crumble. Garnish with thyme. The salad tastes warm or cold.

5. Serve with roasted black bread.
