Recipe steak and fried egg with fried potatoes

ingredients

(for four portions)

  • 1/2 onion
  • 1 green pepper
  • 2 tbsp smooth parsley
  • 2 teaspoons olive oil
  • 2 cups (about 230 ml)
  • cooked potato cubes
  • salt
  • pepper
  • Cooking spray or rapeseed oil
  • 4 fillet steaks à 120 g (without fat)
  • 4 big eggs
  • 4 medium sized oranges

preparation

  • Peel off the onion and chop. Clean the peppers, shred and dice. Rip parsley and finely chop the leaves. Heat a large pan over medium heat and add the olive oil.
  • Add the potatoes, season with salt and pepper and fry in about five minutes until they turn soft and golden brown. Reduce the temperature, season the potato pan again and stir in the parsley.
  • In the meantime, make a second pan very hot, spray with Cooking Spray or brush very thinly with rapeseed oil. Rinse filet steaks, pat dry, salt, pepper and place in the pan.
  • Roast as desired (after about three minutes per side, the steaks are medium). Remove steaks from the pan and keep warm in aluminum foil.
  • Reduce stove temperature. Beat the eggs gently and fry them in the same pan as the steaks (possibly spray the pan again with Cooking Spray) until the egg whites are largely stabilized.
  • Turn the eggs and remove from the pan after ten seconds. Spread the fried potatoes with fried eggs and steak on four plates. Serve the oranges with it.
