Stevia makes the race! The all-rounder is calorie-free, vegetable, suitable for diabetics and about 300 times sweeter than sugar. Whether pastries, cakes or drinks - even savory dishes can be spiced up with Stevia. Reason enough, at least now and again to refrain from sugar and to include the natural sweetener Stevia in our kitchen repertoire!

However, cooking with Stevia requires a rethink. Due to the strong sweetness, sugar can not simply be replaced with the same amount of Stevia. Those who usually drink their tea with a teaspoon of sugar only need about 0.02 grams of stevioside. That's why Stevia cuisine needs its own recipes. Orange celery salad with lime dressing

Ingredients for 2 servings

For the salad: 400 g of celeriac juice of 1 lemon2 oranges40 g of walnut kernels

For the dressing: juice of 1 lime100 g natural yoghurt100 g sour cream2 tablespoons rapeseed oil1 DL stevia powder (a coated scoop contains about 0.1 ml stevia powder) Scrape off of 1/2 organic orange salt and pepper

That's how it's done

Thoroughly wash and peel the celeriac for the salad. Grate the celery roughly and place in a salad bowl. Drizzle immediately with lemon juice. Wash the oranges thoroughly and pat dry.

Rub off one half of the orange peel and set aside for dressing. Peel the oranges so that the white skin is removed. Trigger the orange fillets, halve, add to the celery shavings and mix well. Chop the walnut kernels and mix.

Mix the ingredients well for the dressing and pour over the salad. Mix well and serve.

Milk rice cake

Ingredients for a cake

200 g Unsweetened spelled rusks125 g Semi-fatty margarine or butter350 g pitted cherries from the jar10 g stevia granules1 pack vanilla-flavored custard powder700 ml milk150 g round-grain rice15 g stevia granules1 pieces of organic lemon zest2 pinch of salt200 g cream1 pack of clear tartspoured cinnamon for dustingMargarine or butter for the shape

That's how it's done

Grease the springform pan with margarine or butter. Put the rusk in a freezer bag and close it tightly. Roll over it with a rolling pin until the rusk is finely crumbled. Put the crumbs in a bowl. Set aside two tablespoons of crumbs in a cup.

Melt margarine or butter in a small saucepan and mix with the breadcrumbs. Add the mass to the springform pan with a tablespoon and shape a bottom and a margin about two centimeters high.

Put the cherries with juice in a saucepan, stir in the Stevia granules and the custard powder and heat until a thick mass is formed. Put the pot aside, let the cherries cool. Carefully spread the cherry paste on the ground with a tablespoon and smooth it out.

Boil the milk with rice, stevia granules, lemon zest and salt in a saucepan. Let it swell for about 30 minutes over low heat with occasional stirring. Remove the lemon peel. Beat the cream until stiff and pull it under the slightly cooled rice. Bring the cake to a boil, allow to cool slightly and stir in the rice pudding. Distribute the cream and milk rice evenly on the cherry mass.

Make the cooled milk cake cold for one hour. Sprinkle the cake with rusk crumbs before serving.

Strawberry gratin

Ingredients for 4 servings

500 g strawberries400 g cream cheese8-10 stevia drops8 tablespoons freshly squeezed orange juice peel from 2 organic lemons4 egg whites1-2 tablespoon almond flakes

That's how it's done

Preheat the oven to 150 degrees. Wash, pat dry, stalk and halve the strawberries. Quarter larger fruits. Put the strawberries in a casserole dish and distribute. Stir cream cheese with stevia drops, orange juice and lemon peel until creamy in a bowl. Beat the egg whites until stiff and place them under the mass.

Then spread the cream cheese on the strawberries and sprinkle with the almond flakes. Baked on a medium bar for about 20 to 25 minutes.
