Ingredients:

(for four persons)

  • 250 grams of dried chickpeas
  • 750 milliliters of water
  • 1 finely diced carrot
  • 1 branch of smooth parsley
  • 1 bay leaf
  • 1 chopped onion
  • 2 tablespoons olive oil
  • 2 chopped garlic cloves
  • 1 finely chopped red onion
  • 2 roughly chopped tomatoes
  • 250 grams of chopped chard
  • salt
  • pepper

Preparation:

  • Soak chickpeas overnight in plenty of cold water.
  • Drain, rinse and place in a large saucepan with the specified amount of water. Add carrot, parsley sprig, bay leaf and onion. Bring to a boil, at the same time draw a foam from a surface. Simmer on a low heat for 20-25 minutes until the ingredients are tender.
  • Meanwhile fry garlic and red onions in olive oil for 3 to 4 minutes. Add tomatoes and cook for 5-6 minutes with frequent stirring.
  • Add to the chickpeas and stir in the chard. Now salt and pepper, then boil. Reduce heat and simmer gently for 5 to 6 minutes. Fill in preheated bowls.
