Make gnocchi yourself

They are small, fine and taste heavenly good: gnocchi . The small potato dumplings are the new stars in our gourmet heaven.

Gnocchi are made from boiled potatoes and are very similar to German potato noodles. Depending on the region, the small dumplings are refined with herbs and spinach. Although gnocchi are not related to pasta, they are at least as popular as the Italian classic .

Homemade gnocchis will taste delicious if you wave them in browned butter after cooking. But also for vegetables and in tomato sauce, the dumplings are a delight. Granted - we have long ago made us over the finished gnocchi from the refrigerator. But since we know how easy it is to make gnocchi, the Gnocchi recipe is at the top of our favorites list.

Ingredients (4 people)

750 g floury potatoes, 3 egg yolks, 60 g potato flour, 60 g semolina, 2 tbsp grated Parmesan cheese, salt

preparation

1. Wash potatoes and cook in boiling water for about 20 minutes. Drain and let cool slightly.

2. Pales and still warm through a potato press. Let the potato mixture cool completely.

3. Knead the potato mixture with egg yolk, flour, semolina and grated Parmesan cheese. Season with salt.

4. Form strands about 3 cm thick on a lightly dusted work surface.

5. Divide the individual strands into small pieces, slightly reshape and ...

6. ... lightly press in with a forked fork.

7. Pour portion by portion into boiling salted water. Allow to stand for 4-6 minutes until they float on the surface.
