Slim-recipe salmon with chili butter

Diet Special: Recipes from the 12-second diet

Ingredients (for four servings)

  • about 4 stalks of coriander
  • 12 handful of mixed lettuce
  • 80 g mushrooms
  • 3 shallots
  • 1 chipotle pod in adobo sauce (canned, substitute chopped peppers from the jar)
  • 4 teaspoons soft butter
  • possibly 1 tbsp. adobo sauce
  • 1/2 tsp brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 salmon fillets à 175 g
  • 150 g of fat-free croutons
  • 1/2 cup (about 230 ml) fat-free dressing
  • 1 lime

preparation

  • Preheat oven to 200 degrees. Rip the coriander and chop the leaves. Clean the lettuce, wash and spin dry. Also clean the mushrooms, peel the shallots, cut both into slices. Chop chilli pepper.
  • Knead the butter with chili, possibly with adobo sauce, sugar, salt and pepper in a small bowl until well mixed.
  • Rinse off the fish and pat dry. Tear off four 30 cm pieces of aluminum foil. Place a piece of fish in the middle of each foil, season with salt and pepper. Spread one teaspoon of chili butter on each piece of fish and sprinkle half a teaspoon of chopped cilantro. Fold the film over the fish, fold the ends as airtight as possible.
  • Place the fish packets on a baking sheet and bake in the oven at 200 degrees for eight to ten minutes. The fish then decays easily under the fork.
  • Mix the lettuce, mushrooms, shallots, tomatoes, croutons with the dressing in a large bowl. Distribute on four salad plates. Serve the salmon slices with lime slices and salad.
