Muffins with fresh plums, a pinch of cinnamon and crunchy walnuts - just right for the first autumnal days!
Hach, it's getting really autumnal outside, the foliage changes color and you get the mood for cozy Sundays at home. Of course, these are the most beautiful when it smells of freshly baked cake in the whole house. And that's why we still have a really nice autumnal muffin recipe for you today. Super easy and, above all, delicious!
You need: 300 grams of fresh plums | 125 grams of butter | 3 eggs (M) | 250 grams of flour | 1 tb baking powder | 50 grams of walnuts | 70 grams of sugar | 75 ml of milk | 1 tablespoon honey | 5 tb of cinnamon | 1 pinch of salt | 1 packet of vanilla sugar | Muffin tins
First, wash the plums, core them and cut them into small pieces. Then chop the walnuts a little bit and caramelise with the honey in a pan. Now set aside the nuts to cool off. Preheat the oven to 150 degrees (convection).
Beat the butter, sugar, vanilla sugar and salt with the hand mixer until frothy. Stir in the eggs one at a time. Now mix the flour, baking powder and cinnamon and stir together with the milk under the dough. Next carefully prune the plums and walnut kernels. Now just put the paper muffin bowls into the muffin tin, add the dough about 2/3 and put the autumnal cakes in the oven for 20 minutes.
Remove the muffins from the oven, allow to cool and then free them from the muffin tray. If desired, dust with powdered sugar and cinnamon or put a crème fraiche bonnet on top.
It tastes just as good as the rustle of autumn foliage under the shoes sounds. Yum!
