Franzellii cooks easily "Franziska Ludwig takes 50 kilos off with her own recipes

50 kilos in one and a half years: Franziska Ludwig (26) has made it and taken off with the help of her own recipes.

Previously, she was a cook muffle, today Franziska Ludwig is several pounds lighter and has just published her first cookbook.

Not only is she a successful food blogger, she has also just released her first own cookbook "Franzellii Cooks Easily" . She shared her experiences around her great customer success with us.

Franziska Ludwig was not really skinny even at kindergarten age. But then her weight was not a problem for her. Since her parents are both slim, she could not hold the genes responsible for her own weight gain.
The problem: Franziska always tasted so good that she liked to eat a little more. Besides, she just could not say 'no' for sweets.

When Franziska then left home, the number on the scales continued to climb higher. Fast food, ready meals and Co. contributed to their part. Much exercise was out of the question for the young woman. By now it had become arduous.

The U-turn: "When my emotional barrel was over"

On holiday on the Turkish Riviera it finally makes a click at Franziska. She feels absolutely unwell and watches and does not want to relive it. After the holiday in July 2013, her decision is clear: she wants to lose weight and "radically change her life".

And she really does. Of course, the beginning was anything but easy. "Of course, I had to radically change my diet and also move a lot more, " explains the 26-year-old. After much research and analysis, Franziska decided to go for a "low carb, high fat" diet. Instead of many carbohydrates and bad fats, she now switched to food and meals with a few carbohydrates, lots of protein and saturated fat. The first kilos tumbled quickly.

Franziska Ludwig: From the cooking muffle to the food blogger

The fact that she was now so busy with her diet, Franziska really came to a boil. "Previously, my diet consisted of ready meals and Maggie bags because it had to go fast and I had no idea about cooking, " she explains.

Over time, Franziska began to develop her own recipes. "It's fun to try new dishes, I love to do an experiment in the kitchen and develop new recipes."

But how do you do that? How to develop a new recipe?
"I usually go shopping without a shopping list and then buy the fresh food in the supermarket or at the weekly market and then think about what I could cook with it locally. Most of the time I get ideas directly or I browse a bit on the internet or in other books to gather suggestions. Mostly I get inspired by my own ideas and then put them into the kitchen. I do not have a precise concept, it happens more spontaneously and from the gut, " says Franziska.

Her goal did not reach her without sport

But not only Franziska's experiments in the kitchen were the reason for their ever-progressive weight loss. It was not possible without sport.

"I started with very light movements, such as going for a walk, swimming, etc. and then started with weight training and endurance training, " says Franziska. Sport has always played a big role in their weight loss program - and still does today.

It was not an easy path that Franziska had to sit back. Of course, the number on the scales did not always go down. But after a year and a half she made it: She lost 50 pounds. Instead of 120 kilos, the scales now shows 70 kilos.

Her own recipes helped her to great success - not just on the scales. In April 2014, she launched her own food blog Franzellii, sharing her experiences and recipes to this day.

This was followed by an Instagram account with over 53, 000 followers and a successful YouTube channel. In 2016 she won second place in the category "Best Food Tuber in German-speaking countries" at the "Food Blog Award".

Franziska has decreased without counting calories and constant prohibition. That's why there's no calorie information in her cookbook. " For me it has always been important to listen to one's own body and consciously eat healthy, without having to calculate calories or nutritional values ​​accurately and always keep an eye on them. Of course, I've tried that, but it has always "stressed" and put pressure on me, so I did not do it during my acceptance, "she says in an interview with Wunderweib.

And how does she try to keep her weight?

After her big weight loss, Franziska finally underwent a tummy tuck. After the operation she was then allowed to do no sports for three months. 10-15 kilos returned. But she does not let that discourage her and does not spoil her success: "I eat healthy and tasty, do sports and did not become the couch potato I once was."

Currently, she does not follow a certain nutritional style, but cooks "simply with fresh ingredients and a lot of variety". Sport does it 1-5.5 hours 4-5 times a week. In addition Franziska goes every day - in all weather - 30-60 minutes walk.

And what about Franziska's plans for the future? "First of all, I'm looking forward to the publication of the book and look forward to all the tasks that are associated with it, " she tells us. She also wants to work on her blog, be more active again on YouTube and possibly even write a second book.

For breakfast: Coconut almond French toast

The recipe

Ingredients:

FOR 2 PEOPLE

  • 2 eggs
  • 5 tablespoons almond drink
  • 2 teaspoons sugar
  • 2 tbsp coconut flakes
  • a little ground vanilla
  • 4 slices of whole wheat toast
  • 1 tablespoon chopped almonds
  • 1 tbsp ground almonds
  • Fruit and topping of your choice

Preparation: 10 min.
Baking: 15 min.

That's how it's done:

  1. Preheat the oven to 175 ° C (convection). Cover a baking tray with baking paper.
  2. Whisk the eggs with the almond drink in a deep plate. Stir in the sugar, coconut flakes and vanilla. Turn the toast slices well in the egg mixture and place them side by side on the baking tray.
  3. Sprinkle the slices of toast with the chopped and ground almonds and bake in the oven on the middle rack for about 15 minutes until crispy.
  4. Remove the French toasts from the oven and arrange on a plate. Cover with a topping of your choice (eg almond paste), cover with fruit to taste and best enjoy warm.

Lunch: Penne with cream cheese sauce and salmon strips

Whole wheat pasta is a healthy meal with all its fiber and nutrients.

The recipe

ingredients

FOR 2 PEOPLE

  • 200 g whole grain penne
  • salt
  • 250 g of brown mushrooms
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 150 ml vegetable broth
  • 200 g herb cream cheese
  • 4-6 basil leaves
  • 200 g smoked salmon
  • pepper from the grinder

Preparation: 30 min.

That's how it's done:

  1. Cook the noodles in plenty of salted water according to the package instructions. Drain into a sieve and let drain, process immediately.
  2. While the pasta is cooking, clean the mushrooms, if necessary, rub dry with kitchen paper and cut into slices. Peel the garlic cloves and cut into fine cubes.
  3. Heat the oil in a large pan, sauté mushrooms and garlic in it for about 3 minutes. Deglaze with 150 ml of water and broth and stir in the herb cream cheese. Simmer the sauce under moderate heat for about 10 minutes.
  4. Wash the basil and pat dry. Cut the smoked salmon into strips and add to the sauce 3 minutes before the end of cooking. Mix the noodles under the mushroom and salmon pan, season with salt and pepper and serve garnished with the basil leaves.

An all-time favorite of Franziska: spinatrisotto with grilled cheese

The recipe

ingredients

FOR 4 PEOPLE

  • ½ onion
  • 2 tablespoons butter
  • 250 g risotto rice
  • 1 liter of hot vegetable stock
  • 200 g barbecue cheese
  • 250 g leaf spinach
  • 3 sprigs of thyme
  • pepper from the grinder
  • 50 g of grated Grana Padano

Preparation: 30 min.

That's how it's done:

  1. Peel the onion and cut into fine cubes. Melt 1 tbsp of butter in a saucepan and sauté the onion cubes with the rice over medium heat while stirring for about 2 minutes. Add so much hot stock that the rice is well covered and simmer with frequent stirring.
  2. Cook the risotto for about 20 minutes over medium heat. Always add hot broth and simmer, stirring the rice more often. The rice should be firm, but creamy.
  3. Meanwhile, cut the barbecue into coarse cubes. Wash the spinach, spin dry and cut into small pieces. Wash the thyme and spin it dry, pluck the leaves and chop finely. Melt the remaining butter in a non-stick pan and fry the grill cheese in golden brown.
  4. Stir spinach and thyme under the risotto, simmer for about 3 minutes and season with pepper. Rub the Grana Padano over the risotto and stir well. Arrange the risotto in deep plates and spread the fried cheese cubes over it.

For dessert: healthy brownies

Juicy and healthy: You can eat these brownies and lose weight anyway.

The recipe

ingredients

FOR 1 RECTANGULAR BAKING FORM (15 × 20 CM)

  • 2 eggs
  • 1 salt
  • 1 vanilla pod
  • 180 g unsweetened applesauce
  • 100 g of flour
  • ½ tsp baking powder
  • 60 g of sugar
  • 2 go EL cocoa powder

Preparation: 15 min.
Baking: 20-25 min.

That's how it's done:

  1. Preheat the oven to 170 ° C (convection). Lay out the bottom of the mold with baking paper.
  2. Separate the eggs carefully, beat the egg whites with a pinch of salt in a high mixing bowl with the whisk of the hand mixer. Cut the vanilla pod lengthways, scrape the pith out with a sharp knife and mix well with the applesauce and the yolks in a bowl.
  3. Mix the flour with baking powder, sugar and cocoa powder in a bowl, stir in the egg yolk and applesauce mixture and then carefully fold in the egg whites. Pour the mixture into the pan and smooth it, bake in the oven on the middle rack for 20 to 25 minutes (make a stick sample, see tip).
  4. Remove the ready-baked plate from the oven and let it cool for 5 minutes. Then release from the plate and allow to cool completely. To serve, cut into 9 to 12 equal square pieces and serve for coffee or tea.
