Really good ice cream - that's the secret

Lara and Katrin need to know what makes good ice cream. The two women opened an ice cream parlor last year and know what makes good ice cream parlors - not just their own.

You will recognize an ice cream parlor with really good ice cream

Just try it is always helpful. But you can not figure out how artificial the ice is made. Fortunately there is a trick to recognize in every city which ice cream parlor makes good ice cream.

You have always gone to optics? Clear, piled, creamy icebergs look super-appetizing. But: Unfortunately you do not realize how good the ice is. On the contrary - the ice towers are just a sign of additives such as emulsifiers.

And why? The ice princesses explain: "Under normal conditions, the icebergs would melt, and an ice cream cabinet will cool from below and have no power at all to keep the large amount of ice cool." In other words, whoever heats up his ice needs artificial additives so that it does not melt in the display.

The color of the ice also reveals a lot about the quality of the ice. What few people know: pistachio ice cream is not green and vanilla ice cream is not yellow. And if it does, then it probably helped - with flavors and colors.

For example, if a strawberry ice cream is labeled 'strawberry ice cream' - do not touch it! In most cases, there are no strawberries in it. Caution is also necessary with cream ice cream.

Favorite ice cream sorbet

The secret favorite among the ice princesses: chocolate sorbet. Sorbet? Yes exactly! Unlike chocolate ice cream, this chocolaty love affair is made from water and cocoa. According to the regulations of the German food regulation, the fruit content here must amount to at least 25%, regulations of which we knew very little so far and "allow things that the ice princesses would never use."

Home-made ice cream must be pitched vigorously

The ice cream parlor is not just around the corner? Then it says: Do it yourself. Small tip of the experts: The mass always hit well. And cover properly. Only in this way can ice crystals be prevented. The latter also applies to bought ice cream from the supermarket. But let's be honest: Which finished ice can compete with the ice cream of the best ice cream parlor in Germany? Just! So you better swing on the bike and cycle to the ice princesses.

About Hamburg's ice princesses

Goat's cheese, rosemary and honey - everyone knows this trio. Not from the ice cream machine, but from the oven - as a topping on the salad or the pizza. But as ice? Heavenly! For the warm summer days there is the delicious combination as ice cream. And in Hamburg - at Germany's most popular ice princesses. (Rathenaupark 15, 22763 Hamburg)

Lara Maria Oppenberg and Katrin Kerhoff - these are the names of the two women behind the ice princesses. Thirteen years ago they met while studying architecture. Can you plan a house, but can you plan an ice cream parlor? They can do that - very well. Two years ago, they wrote their business plan and went to an ice technical school. Two years in which Lara and Katrin have become Germany's most popular ice princesses.

"That can not have been everything yet"

"We've always liked to cook and bake, I've even made chocolates myself, but ice cream, so far we have had no points of contact, " says Lara. And why is it just ice cream and not cake? "To be honest, a mutual friend gave us the idea, " Lara continues. Homemade ice cream without additives - where is this still today? To be honest ... . For a year with the Eisprinzessinen- luckily.

Princesses only wear pink? Normal princesses maybe, but not ice princesses. They wear yellow, red and white - so all the imaginable colors that make an ice cream parlor. And then why the name? Well, because he was practically imposed on them. From the beginning they were the ice princesses - with their old boss, with their friends and colleagues. The greeting "well you two ice princesses" - not uncommon.

Everyone likes vanilla

Vanilla, chocolate and stracciatella. Mango, poppy seeds and cucumber. Cucumber? Yes exactly! The bestseller among the ice creams. "Actually, we just wanted people to talk about it, " says Katrin. And they do - to a great extent. Not because it does not taste, but because they love it.

Katrin and Lara have learned how to ice ice cream - two years ago in an ice school in the Sauerland, today in their own ice lab. An ice lab? Yes exactly! This is the place where the two women create their new ice creams, such as apple celery or goat cheese rosemary honey. At first glance - on purpose. On the second - a culinary delight. The combination goat cheese rosemary honey - an old hat. And the duo apple celery aka Waldorf salad just right. So why not as ice?

Which is her favorite ice cream? Ever so easy to answer. At the top of Katrin's favorite list: peanut-chocolate-caramel crunch. And with Lara: coconut and poppy. "Poppy is always" and "coconut tastes so nice after vacation." But also almond and cashew. And goat cheese rosemary honey. It's hardly surprising that the two ice cream princesses treat themselves each morning with a large sundae. "I was so looking forward to the ice yesterday evening, " laughs Lara.

Speaking of sundaes. The only ice cream cup the ice princesses offer is the spaghetti ice cream. A layer of whipped cream on creamy vanilla ice cream, topped by a fruity strawberry sauce - homemade of course. At least as popular: vanilla, chocolate and stracciatella - the classics. And to top it off, a scoop of poppy seed, cucumber, buttermilk orange, white chocolate, mascarpone cherry, grandma's apple pie, ... - wonderful!
